Eggs Baked in Avocados

Sunday morning breakfast starts with two avocados ripened on my counter. I gathered four eggs, about a half cup of shredded white cheddar, pepper, salt, and a half cup crumbled bacon. Pre heat oven to 450 degrees.Split avocados in half remove pit. Lightly oil cooking vessel and place avocados split side up .White cheddar, eggs, crumbled bacon.Salt and pepper to taste the split avocados.Ingredients.Crack an egg in each avocado. It would be a good idea to use a medium or small egg so the egg white doesn’t spill over sides. Just in case the eggs run over the side, oil the bottom and sides of your baking vessel for easier clean up. I also salt and pepper the eggs. Sprinkle with white cheddar, and crumbled bacon . Carefully bring baking vessel to the bottom rack of your pre heated oven, so that the ingredients don’t slide out of the avocados. Bake at 450 degrees for 10-12 minutes.Out the oven and into our tummies. Breakfast for two or four.Hot from the oven.We wanted a light quick meal because there is bound to be a lot of food and some chocolates in the afternoon. Happy Easter morning to all.
